Well, it's that time of year again. Dare I say, one of my very favorite days of the year.
You see, I'm not exactly the biggest NFL fan in the world.
There are three dudes living in my home, so in August of each year, the TV is totally overtaken with football all day on Sunday and Monday nights.
And if Sundays and Mondays aren't enough, at some point in the season, they start playing on Thursdays and Saturdays.
The testosterone, gheeze. Even my one year old is running around tackling stuff.
Clearly that is just too much for me to keep up with.
So you can see why I look forward to the first Sunday of February every year. For me, it marks the end of football for seven whole months.
And that makes me happy beyond belief. Happy enough to celebrate with these amazing brownies.
Super Bowl Snack Brownies
makes 16 bars
For the Brownie Base:
Here's the recipe for my go to brownies, or use your favorite brownie recipe
Bake the brownies in a 9-inch square pan according to the recipe's instructions.
Remove from oven and allow brownies to cool completely.
For the Topping:
4 Tbsp butter (half a stick)
3 cups mini marshmallows
½ cup smooth peanut butter
4 cups popped popcorn, I used Trader Joe's Kettle Corn
½ cup salted peanuts
½ tsp sea salt
Melt the butter in a large pot over medium heat. Once the butter is melted, add the marshmallows and stir until melted. Stir in peanut butter. Fold in popcorn and peanuts and stir until completely coated. Stir in salt.
Pour mixture over cooled brownies and spread evenly.
Chill in the refrigerator for 1-3 hours before slicing into 16 bars.
