Layered Crispy Peanut Butter Bran Brownies

Crispy, peanut butter coated bran flakes are layered inside the best dark fudge brownies. If you are a fan of salty and sweet, this dessert has you covered!

Ok, so the title of this post may not have won you over. But just hear me out...
Have you ever made rice crispy treats? I know we all love those things. Well, I didn't have rice crispy's, but I did have bran flakes! So exciting, right?

I did what any other desperate dessert loving person would do and made a sticky sweet peanut buttery treat out of those bran flakes and layered them between fudgey layers of dark chocolate brownies.

See how easy it is to turn something healthy into a decadent treat? 
Now if I could just do that in reverse, I'd really be onto something!

I'm guessing these could be made with regular corn flakes, frosted flakes, or any half eaten box of cereal you have in the back of your pantry.

Layered Crispy Peanut Butter Bran Brownies
makes 16 bars

For the brownies:
1 stick unsalted butter, melted 
⅔ cup canola oil
½ cup extra dark cocoa powder
4 large eggs, room temperature
½ cup granulated sugar
¼ cup brown sugar
1 tsp pure vanilla extract
1 ½ cups all-purpose flour
½ tsp Kosher salt
½ cup bittersweet chocolate chips
½ tsp sea salt
5 oz. bittersweet chocolate, chopped

Preheat oven to 350º F. Butter the bottom and sides of a 9 inch square baking pan. Line pan on one side with parchment with sides overhanging slightly. Butter parchment and set aside.
Pour the melted butter and oil in a large bowl. Add eggs and vanilla and whisk well. Add cocoa powder and both sugars and whisk well to combine. Fold in flour and salt. Stir in chips.
Spread half of batter in the prepared pan. Evenly disperse half of filling over batter and sprinkle with sea salt. 

Spread remaining batter over the filling and bake in preheated oven for 25 minutes.

 Remove from oven and sprinkle with the chopped chocolate and allow to sit for 5 minutes. Using a spatula, spread melted chocolate evenly over top of brownies. 

Top with remaining bran filling and sprinkle with a dash of sea salt.

You may wish to drizzle with more melted chocolate!
Chill bars for a couple of hours before slicing.

For the bran flake filling:
4 cups bran flakes
½ cup light corn syrup
1 cup smooth peanut butter
1 tsp pure vanilla extract

Pour the bran flakes in a large bowl.
Melt the syrup and peanut butter together over low heat. Stir in vanilla. Pour mixture over bran flakes and stir gently to evenly coat.
