With only four simple ingredients, this chocolate, bacon, and banana waffle panini is anything but.
With the first few days of the new year behind me, I can finally go back to my normal diet.
Phew, those first couple of days of detox were really tough.
This panini was created strictly out of necessity. Trust me when I say this.
My refrigerator was full of greens, greens, and more greens. And my pantry wasn't looking any better with the exception of a jar of chocolate spread.
I took that as a fateful sign that I needed a little break from my quinoa oatmeal, spinach smoothies, and carrot soup.
So I grabbed some bananas and frozen waffles. And since I was breaking my diet, I decided to go big and throw in some bacon.
Four ingredients my friends.

Chocolate, Bacon, and Banana Waffle Panini
4 frozen waffles
4 Tbsp chocolate spread
2 bananas, sliced thin vertically
4 slices of cooked bacon
2 Tbsp butter, softened
Spread one tablespoon of spread over each waffle. Place banana slices over two of the waffles. Divide bacon evenly between the other two waffles. Top each banana side with a bacon side. Spread the top side with butter.
Melt one tablespoon of butter in a cast iron skillet over medium heat. Add the waffle sandwiches, buttered side up, to the pan and cook over medium-low heat for 5 minutes. Flip each sandwich and continue to cook until chocolate is melted and waffle is crisp.
