Over the years, I have made many many different versions of holiday bark, and I've got to say that the peppermint variety is my absolute favorite.
This particular version was coined "Christmas Crack" by a friend of mine who scarfs hers down all in one sitting, and as a result is awake for the next two days twitching for more.
Seriously, this stuff is that good.
If you've ever made a holiday bark before, you know that they are typically very simple and quick to make, requiring no cooking or baking...yay!
You'll start this one by melting a good quality dark chocolate spiked with a little splash of peppermint extract and pouring it over crushed candy cane oreo's on a sheet pan.
Once that is set up, it'll be topped with a good quality melted white chocolate then sprinkles with crushed candy canes and candy cane mini marshmallows just for good measure.
Warning: this stuff is highly addictive. Proceed with caution!
Holiday Peppermint Bark
12 candy cane oreo cookies, crushed
8 oz good quality bittersweet chocolate
1 tsp peppermint extract, divided
8 oz good quality white chocolate
4 candy canes, crushed
1/2 cup candy cane marshmallows
Line a baking sheet with parchment paper.
Sprinkle crushed cookies on baking sheet.
Place chocolate in a microwave safe bowl. Place in microwave for 1 minute. Remove bowl and stir chocolate. Continue to microwave at 30 second intervals, stirring between each, until fully melted. Add 1/2 tsp extract and stir. Spread melted chocolate over cookies on sheet.
Place sheet in refrigerator for 15 minutes to harden.
Meanwhile, place white chocolate in a microwave safe bowl and place in microwave for one minute. Remove and stir. Continue to melt chocolate in 30 second intervals, stirring between each, until chocolate is melted. Add 1/2 tsp extract and stir. Spread white chocolate over dark chocolate. Sprinkle on candy canes and marshmallows.
Refrigerate until hard. Remove from refrigerator and break into pieces.
Try to eat just one!
