Chocolate, Brie, and Cranberry Grilled Cheese

Friday nights are grilled cheese night at our house. Even through the craziness of the holidays, with casseroles, soups, and baked goods galore, we all look forward to whatever crusty, cheesy creation will be donning our table come Friday night.

Since we were having some friends over this past Friday, I knew I couldn't just throw any old grilled cheese out for dinner.

I was lucky enough to have scored some amazing chocolate spreads from Hershey's®, so I definitely had some tricks up my sleeve to ensure an unforgettable grilled cheese experience.
I had three different Hershey's™Spreads flavors to choose from; chocolate, chocolate with almond, and chocolate with hazelnut.

Once I took inventory of my other potential ingredients, I decided on using the plain chocolate spread for this grilled cheese sandwich.
Talk about easy entertaining, this hot, melty sandwich requires only four ingredients!

I sliced up a hearty Italian loaf, spread some of that sinful chocolate spread over each slice (because why the heck not?), layered on some brie cheese, and topped with a spoonful of cranberry sauce.

It really doesn't get any more low maintenance than a grilled cheese sandwich, but one very important detail is that you absolutely must cook it low and slow. This means, melt some butter in a skillet over medium heat, place your sandwich in the skillet and cook over low heat until perfectly crisp on the outside and melted all the way through the middle, only flipping it once.
If you follow that simple rule, you'll have an amazing grilled cheese experience every single time.

And by amazing, I mean hot and crispy with mild melty cheese with a little touch of tartness and texture from the cranberries with a deep, indulgent finish from the chocolate spread.
I think this is one grilled cheese sandwich that will be making an appearance on more than just Friday's!

Chocolate, Brie, and Cranberry Grilled Cheese
makes 2 sandwiches

4 slices crusty bread
4 oz brie cheese
4 tablespoons cranberry sauce
4 tablespoons Hershey's™Spreads, chocolate flavor
2 tablespoons butter

Melt one tablespoon of butter in a heavy bottomed skillet over medium heat.
To assemble sandwiches, spread one tablespoon of chocolate spread over each slice of bread. Top each of two slices with two ounces of sliced brie. Top brie slices with two tablespoons of cranberry sauce. Top with remaining slice of bread.
Place each sandwich in the hot skillet and immediately turn the heat down to medium-low. Spread the top half of each sandwich with remaining one tablespoon of butter. Cook for 3-5 minutes on each side, until bread is crisp and golden and cheese is melted through.
Remove from skillet, slice and serve.
Enjoy!

Ohh looks really good!I know I can often find Brie and other fine cheeses on 50% off clearance in the deli areas of my local Safeway..otherwise this might be too rich for my budget ,but since I know where to go to get the ingredients cheaply ,It 's a Go!!TY!!..not sure if the kiddos will go for it but I can try and you just never know.I like to keeps thing adventuresome in the eating dept..keeps 'em healthy and open to new things!

  12. Hi Kathy, thanks so much for your comment. I know what you mean about the kiddos having picky palates. I told my 15 year old step son that this was a raspberry cream cheese and chocolate grilled cheese and he took it down without even coming up for air. lol.
