Every once in a while though, I crave bar-b-que, and when I do, it better be good!
This recipe is not only totally delicious, but it comes together in a cinch in the crockpot!
You could use anything to top your shredded bar-b-que chicken, but I chose to top mine with The Pioneer Woman's cilantro slaw.
Slap it all between a nice brioche bun and you've got yourself some south in your mouth!
Bar-B-Que Shredded Chicken:
makes 6 cups of shredded chicken
4 pounds boneless skinless chicken thighs and breasts
1 large yellow onion, diced
4 cloves garlic, minced
2 teaspoons Kosher salt
1 teaspoon freshly ground pepper
12 oz bottle of your favorite bar-b-que sauce
Place chicken in the bottom of your slow cooker. Layer on the remaining ingredients, saving some sauce to top your sandwiches.
Set slow cooker on low heat and cook for 8 hours. Shred chicken using two forks and stir to combine with sauce.
Place desired amount on a fresh bun and top with slaw and bar-b-que sauce.
